Pickle mixes usually have pickled vegetables such as carrot, red pepper, yellow pepper, green pepper, gherkins, cauliflower and onions. They can contain all of the above or just some of them, depending on the likes or intended use. In some countries pickle mixes can also contain fruits, like in India, or other vegetables, like celery in turkey’s tursu.

Elettaria cardamomum

Está constituido por las semillas de los frutos de una planta pariente del jengibre, la Zingiberiácia: Elettaria cardamomum L. Se cosechan las cápsulas poco antes de la madurez, se desecan con cuidado y se separan los pecíolos. El cardamomo se comercializa frecuentemente en forma del fruto completo, pues la cápsula cerrada proteje a las semillas de una rápida pérdida de una parte de la esencia durante el almacenamiento.

Del cardamomo se aprovechan las semillas, que se machacan o rallan y sirven tanto para platos dulces como para salados. Es frecuente su empleo en la preparación del curry y como condimento para panes y productos de repostería.
